Chocolate Cherry Chews ½ Cup butter- softened ½ Cup sucanat ¼ Cup sucanat with honey 1 Egg 1 Teaspoon vanilla extract ¾ Cup soft pastry flour ¼ Cup cocoa, preferably Dutch processed ½ Teaspoon baking powder ¼ Heaping teaspoon ground mace Dash salt 1 ½ Cups old-fashioned oats ½ Cup dark chocolate chips ½ Cup dried cherries- chopped finely Preheat oven to 375 degrees F. Lightly coat two baking sheets with non-stick spray. In a large mixing bowl, cream together the butter and sucanat until light and fluffy. Beat in the egg and vanilla extract. Add the flour, cocoa, baking powder, mace, and salt. Beat until smooth. Stir the oats, chocolate chips, and cherries into the dough by hand. Mixture will be very stiff. Using about 1 tablespoon of dough, drop cookies onto prepared baking sheets about an inch apart. Bake 10-12 minutes or until the tops appear dry but not browned.
