Zesty Rice and Bean Salad

Zesty Rice and Bean Salad

2 Tablespoons olive oil

1 Garlic clove, chopped

½ Teaspoon ground red pepper

¼ Cup fresh lime juice

¼ Teaspoon salt

2 Cups brown rice- cooked

15 Ounce black beans- rinsed, drained

15 Ounce kidney beans, rinsed

¼ Cup feta cheese

4 Green onions, sliced

¼ Cup fresh mint- chopped

¼ Cup fresh cilantro- chopped

Whisk together first five ingredients.  Add the remaining ingredients to coat.  Cover and chill one hour.
